OREO COOKIES & CREAM CHEESECAKE
Ingredients:
- X2 packets of Oreos
- 180g of plain digestive biscuits
- 50% less fat soft cheese (200g X2)
- 150ml double cream
- 15g of white granulated sugar
- whipped cream
instructions:
- using a blender or food processor, crush the required amount of digestive biscuits ( you will be using this for the ease of your cheesecake)
- one you have finished blending the biscuits you want to melt some butter in microwave for 15-20 second intervals until melted.
- stir both the butter and the biscuit crumbs together and pour the mixture onto a baking tray allied with baking parchment paper.
- you want to put the base into the fridge , after you have done this get your cream cheese and double cream into a large bowl and with using a electric whisk , stir until thick consistency.
- Next you need to crush oreo biscuits and stir into your cream mixture as well as folding white sugar.
- The next step is to take the base out of the fridge and pour the mixture on top of the base.
- After smoothing the cream topping decorate the cheesecake.

CHICKEN & COUSCOUS FETA SALAD
Ingredients:
- 4 boneless chicken thighs
- 1 cup of couscous (dried)
- 1 tsp tomato puree
- 1 tsp garlic puree
- cherry tomatos
- feta cheese
- a handful of parsley leaves
- chicken stock
- dried seasonings; smoked paprika , garlic salt , mild curry powder , chicken spice.
Instructions
- marinade your chicken with the spices of your choice in a bowl with some olive oil
- heat up a pan on ,medium heat and put some chopped onions and your marinaded chicken. stir then add in some garlic and tomato pree
- once the chicken is cooked you need to boil some water, and measure out 3 cups of couscous. put it on a low heat and leave it to cook. after 5-6 minutes this should one ready
- After this you need to cut up a couple squares of feta cheese
- to serve this meal you can either put it in a bowl or a plate starting off with layering couscous and feta , place your chicken on top and garnish the meal with parsley and more feta cheese
